Try this quick and healthy Carrot Chutney with Idly, Dosa Or Steamed Rice.

Cook Time: 10 mins
Serves: 3

1 cup carrot
1 tablespoon oil
1/2 teaspoon cumin seeds
1 teaspoon urad dal
1 teaspoon channa dal
1 green chilies
1/4 teaspoon hing
1 sprig curry leaves
6 tablespoon grated coconut
1/2 cup water
salt to taste

For Tempering :

1 teaspoon oil
4 to 5 curry leaves 
1/2 teaspoon mustard seeds
A pinch of hing

Directions

1) Heat oil in a pan and add cumin seeds, urad dal & channa dal. Saute until the dal turns golden color.

2) Now add green chilly, hing, curry leaves and stir for 30 seconds.

3) Time to add carrots and salt. Saute for 4 to 5 minutes.

4) Grind this mixture with coconut and water. Transfer this to a bowl.

5) Heat a pan and sputter the mustard seeds. Add curry leaves and hing to this and mix well.

6) Add this tempering to the ground chutney and serve.
