Beetroot Kadala Thoran is a simple, nutritious and healthy south Indian style stir fry. The Thoran (south Indian stir fry) can be made using different vegetable, with minor variations in spices.
Here I have given a twist to the traditional recipe to make it healthier by using sprouted Kadala(chickpea). Sprouting them increases their nutrient value. Sprouted chickpeas can be easily added to salads, snacks or consumed on their own.
Beetroot Kadala Thoran is prepared by stir frying Kadala with grated coconut, finely chopped onions mustard seeds, curry leaves and few spices, You can serve this Thoran(stir fry) as an accompaniment to rice or as a salad bowl.

1 tablespoon oil
1 beetroot, finely chopped
1 cup sprouted chick pea
1 onion, finely chopped
1/2 cup grated coconut
1 green chilly
1 teaspoon red chili powder
1/4 teaspoon turmeric powder
1 teaspoon mustard seeds
2 springs curry leaves
Salt to taste

Directions
1) Pressure cook chick pea in water and keep it aside.

2) Mix beetroot, onion, coconut, green chilly, red chilly powder, turmeric powder and salt with hands.
3) Heat oil in a pan and splutter mustard seeds and curry leaves.
4) Add the beetroot mixture in this pan and mix well. Close the pan and cook till the beetroot is half done.
5) Add cooked chick pea this time and mix well. Close the pan again and cook again till the beetroot is fully cooked.
6) Mix well and enjoy with rice/chappati.
