Ari unda / Rice laddu , powdered rice blended in coconut & jaggery syrup with a hint of cardamom flavor. Ari unda is a traditional snack of Kerala which is easy to prepare.

Ingredients
2 cups rice
2 cups shredded coconut
1 1/4 cup jaggery
1 1/2 tablespoon water
3 cardamom pods

Directions
1) To make Ari unda first we have to dry roast the rice. You can use any type of parboiled rice. Wash rice well and drain the water completely. Pat dry with a cloth / paper towel. Heat a pan on medium high heat. dry roast until rice grains breaks/popping up. You have to keep on stirring to avoid burning. Switch off the flame when the rice is golden brown in color. Transfer this to an another bowl. Allow this to cool down.
2) Grind the roasted rice to a fine powder with cardamom pods.
3) Mix this ground powder with shredded coconut and keep this aside. If the coconut shreds are large, pulse them gently in a blender to make them smaller. Coarsely grind, don't make it smooth paste.
4) Heat pan on low flame. Add jaggery to the pan with some water. Stir until the jaggery is melted. Allow this to cool down slightly.
5) Pour this to the rice mixture. Mix this well.
6) Spread some oil in your hand. shape into even sized ladoos. Sweet & super moist ari unda is ready to eat !!
