Ingredients
500 gram chicken (boneless)
5 teaspoon coconut oil
2 1/2 tablespoon ginger garlic paste
10 green chilies crushed (Increase or decrease the count according to your spice level)
3/4 cup shallots
1 teaspoon black pepper powder
200 milliliter coconut milk
Curry leaves
Salt

Directions
1) Heat coconut oil (Use coconut oil for that authentic taste) in a pan.
2) Now add ginger garlic paste and crushed green chilies. Saute until the raw smell of ginger garlic and green chili goes.
3) To this add finely chopped shallots. Saute until the shallots are in golden brown.
4) Cut boneless chicken into cubes and add it to the pan with black pepper powder and salt. Mix well. Pour some water and cover the pan to cook the chicken.
5) Open the pan and give it a stir. Reduce the flame to low-medium and pour coconut milk. Mix well and reduce the gravy to your preferred consistency. Stir occasionally.
6) Now turn off the flame and garnish with some curry leaves.
7) You can add more coconut oil this time if you like to add more coconut flavor to this. But this step is totally optional. This curry tastes bests with Kerala porotta or Appam.
