Ingredients

400 grams bhindi / okra
1 medium size onion
1 small tomato 
1 tablespoon garlic
1/2  tablespoon ginger
2 green chilies
1/2 teaspoon cumin 
1/4 teaspoon turmeric powder 
1 teaspoon red chili powder
1 teaspoon coriander powder
1 teaspoon cumin powder
1 teaspoon garam masala
Curry leaves
Coriander leaves
Salt

Directions

1) In a bowl mix turmeric Powder, red chili powder, coriander powder, cumin powder with some water and keep this masala paste aside.

2) Heat oil in a pan and fry bhindi until its cooked. If needed, sprinkle little salt while frying bhindi. Transfer this to a bowl and keep it aside.

3) Heat some oil again and add cumin, onion, green chili and curry leaves. Saute this until the onions are golden brown.

4) Add garlic and ginger. Fry this for 30 seconds.

5) Now Reduce the flame. Add the masala paste and saute for 30 seconds.

6) Add tomatoes and cook the tomatoes until its soft.

7) Add salt and fried bhindi. Mix well and saute this for 1-2 minutes.

8) Turn off the flame and add garam masala. Mix well.

7) Add coriander leaves and serve hot.
