Ingredients

6 eggs
2 tablespoons milk
1/2 cup shallots
2 green chilies
1/4 teaspoon black pepper powder [Optional]
1/4 cup tomatoes [Optional]
1/2 cup shredded coconut
1 sprig curry leaves
Coconut oil to grease the muffin tin
Salt to taste

Directions

1)Preheat oven to 350 F/180 C.
2) Combine eggs, milk, shallots, green chilies, black pepper powder, shredded coconut, curry leaves and salt. Whisk and set aside.

3) Grease a muffin tin with coconut oil.

4) Add tomatoes over the wells. This step is optional and you can add other vegetables too.

5) Pour the egg mixture to the muffin tin. Bake 15-20 minutes or until the eggs are cooked.
