Madras Curry Powder |
You can find a few different variations of the Madras Curry Powder, but most would generally contain a blend of spices including cumin, coriander, turmeric and chili powder. The potency and flavors can vary depending on the recipe. Grind and store in a cool dark place.

Serves : 5 Tablespoons
2 tablespoons coriander seeds
1 1/2 tablespoons cumin seeds
1/4 tablespoon mustard seeds
1/4 tablespoon fennel seeds
2 tablespoons black peppercorns
1/4 tablespoon whole cloves
1 tablespoon cinnamon powder
1/4 tablespoon nutmeg powder
1/2 tablespoon cardamom powder
1/2 tablespoon turmeric powder
1/2 tablespoon ginger powder
1 tablespoon red chili powder (or less if you prefer a milder version)
Directions
1) Dry roast all the seeds from first group in low flame for 2 minutes.
