This mildly spiced chicken curry boasts of richness of cashew nuts and the delicate flavor of coconut.

Ingredients:
500 gram chicken, cubed
3/4 cup cashew nuts(unsalted)
1/2'' cinnamon stick3 cloves
3 to 4 dried red chili
1 teaspoon cumin seeds
1 1/2 tablespoons coriander seeds
1 teaspoon ginger, finely chopped
1 teaspoon garlic, finely chopped
1 small onion, finely chopped
1/4 cup grated coconut
2 tablespoons oil
1/2 teaspoon black pepper powder
1/4 teaspoon turmeric powder
2 cups water
1 teaspoon red chili powder [Optional]
2 tablespoons cilantro, finely chopped
Salt to taste
Directions
- Grind 1/2 cup of cashews to a fine powder.
- Heat a pan and add cinnamon, cloves, dried red chili, cumin seeds, coriander seeds, ginger, garlic, onion, coconut and 3/4 of ground cashew powder(remaining, keep it aside). Fry till the coconut and cashew powder turns golden brown. Grind this to a fine paste.
- Heat oil in a pan and add the ground coconut mix followed by salt, turmeric powder and black pepper powder. mix well.
- Add 1/2 cup of water to this, stir until a thick gravy is formed.
- Add another 1/2 cup of water and again thicken the gravy.
- Add remaining cashew powder and mix well.
- Add chicken and 1 cup of water and cook the chicken for 10 to 12 minutes.
- Add red chili powder if you prefer spicier curry. Simmer the curry for one more minute.
- Finally add cilantro and 1/4 cup of cashew nuts.
