This mildly spiced chicken curry boasts of richness of cashew nuts and the delicate flavor of coconut.

Cook Time: 30 min

Ingredients:

500 gram chicken, cubed
3/4 cup cashew nuts(unsalted)
1/2'' cinnamon stick
3 cloves
3 to 4 dried red chili
1 teaspoon cumin seeds
1 1/2 tablespoons coriander seeds
1 teaspoon ginger, finely chopped
1 teaspoon garlic, finely chopped
1 small onion, finely chopped
1/4 cup grated coconut
2 tablespoons oil
1/2 teaspoon black pepper powder
1/4 teaspoon turmeric powder
2 cups water
1 teaspoon red chili powder [Optional]
2 tablespoons cilantro, finely chopped
Salt to taste


Directions
  1. Grind 1/2 cup of cashews to a fine powder.
  2. Heat a pan and add cinnamon, cloves, dried red chili, cumin seeds, coriander seeds, ginger, garlic, onion, coconut and 3/4 of ground cashew powder(remaining, keep it aside). Fry till the coconut and cashew powder turns golden brown. Grind this to a fine paste.
  3. Heat oil in a pan and add the ground coconut mix followed by salt, turmeric powder and black pepper powder. mix well.
  4. Add 1/2 cup of water to this, stir until a thick gravy is formed.
  5. Add another 1/2 cup of water and again thicken the gravy.
  6. Add remaining cashew powder and mix well.
  7. Add chicken and 1 cup of water and cook the chicken for 10 to 12 minutes.
  8. Add red chili powder if you prefer spicier curry. Simmer the curry for one more minute. 
  9. Finally add cilantro and 1/4 cup of cashew nuts.
