Chicken Hariyali Kebab or the Green Chicken Kebab is one of my favorites Chicken Appetizers. Made with freshly ground spinach, mint and coriander leaves, this oven grilled chicken stands out for its unique flavor profile and bright green colors.

Serves: 3


1st marination

500 gram chicken, cubed
1 teaspoon butter
2 teaspoons lemon juice
1/2 teaspoon red chili powder
Salt to taste

2nd marination

1/2 cup fenugreek leaves
1 cup mint leaves
1 cup coriander leaves
1/2 cup spinach
1 1/2'' ginger
4 big or 8 small garlic cloves
4 green chilies
3 tablespoons curd/yogurt
1 1/2 teaspoon garam masala
2 teaspoons coriander powder
Salt to taste


  1. Soak skewers in water for 20 minutes to prevent burning of the skewers during the grilling process.
  2. Marinate chicken with butter, lemon juice, red chili powder and salt for about 10 to 15 minutes.
  3. In the meantime boil fenugreek leaves in 1 cup of water for 1 minute and strain.
  4. Grind boiled fenugreek leaves, mint leaves, spinach, ginger and garlic to a fine paste.
  5. Mix curd/yogurt, garam masala, coriander powder  and salt to the ground paste.
  6. Marinate the chicken with this paste for about 20 minutes.
  7. Preheat the oven to 350 F.
  8. Thread the marinated chickens on skewers and lightly oil.
  9. Grill for about 15 to 18 minutes. Keep checking and flip the skewers to cook the chicken evenly. Spread oil if needed.
