This delicious dessert commonly known as 'Kesari' / 'Sooji Halwa' is popular throughout India and is served at weddings and festive occasions. Made with semolina, sugar and ghee, this sweet dish comes in different flavors - pineapple, coconut and mango.

Ingredients
3 cups water
1 1/2 cup pineapple
1/4 tsp yellow food color
2 tbsp + 2tbsp ghee (Clarified Butter)
3 tbsp cashew
3 tbsp raisins
1 cup semolina
1 1/4 cup sugar
1 tsp cardamom Powder
Instructions
- To a pan of water, add cubed pineapples, yellow food color and bring to boil. Keep aside and let it cool.
- Fry cashews and raisins in 2 tbsp of ghee.
- Add the semolina to this and fry till golden brown.
- Next, add the cooked pineapple (along with the water) and mix all the ingredients together. Cover and cook till this thickens.
- Add sugar, cardamom powder and mix well. Once the sugar has melted add 2 tbsp of ghee.
- Mix well and continue stirring till all the water has reduced and the semolina separates out from the pan.
