Olan is a mildly spiced coconut milk based curry made with Ash gourd and Red Cowpeas. Its light and delicious curry with a great fragrance of coconut oil.

Ingredients

One handful or half cup vanpayar (red cowpeas) 
1 cup elavan (Ash gourd/White wax winter melon) peeled and cubed
2 green chilies
1/2 cup coconut milk
1 tablespoon coconut oil
2 sprigs curry leaves
Salt to taste

Instructions

1) Prep the Vanpayar(Red cowpeas) by soaking it in water for 3 hrs. This then needs to be pressure cooked with 1 cup of water(3 to 4 whistles).

2) To a pan, add the peeled and cubed Elavan(ash gourd), slit green chillies, salt and 1 cup of water. Cook on medium flame for about 10 minutes.

3) To the above, add the cooked Vanpayar (red cowpeas) and coconut milk and mix well.
Continue cooking on medium flame and turn off flame once the Olan curry starts to boil.

4) Finally add the Coconut oil and Curry leaves and mix well.
