Thoran is a quick and healthy stir fry made with finely chopped/grated veggies. It is flavored with coconut, green chilly and curry leaves.

Prep Time : 10 min
Cook Time :15 min


Ingredients

1/2 cabbage
1/2 cup shredded coconut
1 or 2 green chilli
5 shallots
1/4 teaspoon turmeric powder
teaspoon mustard seeds
1 sprig curry leaves
2 dried red chilli
1 tablespoon coconut oil
Salt to taste

Instructions

1) Lightly blend green chilli and shallots .

2) To a large bowl add chopped cabbage, coconut, crushed chilli-shallots mix, turmeric powder and mix well.

3) Heat oil in a pan and lightly saute mustard seeds, dried red chillies and curry leaves. Add the cabbage mix to the pan and stir well.

4) Cover and cook for 10 mins in low flame. You may stir this occasionally to make sure that it does not burn.

5 )Uncover the pan and cook for 5 more minutes. Season with salt as needed.
