Ingredients
3 cups mixed vegetables (You can use combination of any or all of the below)
- Carrots
- Green beans
- Potato
- Raw plantain
- Yam
- Elavan (Ash gourd/White wax winter melon)
- Vellarikka (Yellow cucumber)
- Padavalanga (Snake gourd)
1/2 teaspoon turmeric powder
1 teaspoon red chilli powder [Opional]
1/2 cup curd
2 tablespoon coconut oil
Curry leaves
Salt to taste
To Crush :
1 cup grated coconut

1/2 teaspoon cumin seeds
2 green chilies
6 shallots

1) Cut all the vegetable length wise. Heat 1 tbsp oil in a pan. Add all the vegetables and salt. Saute for 5 min.
2) Add 1/4 tsp turmeric powder, red chilli powder. Close and cook for 10 min in medium flame. Stir occasionally. Add little water if needed.
5) As a final step sprinkle some coconut oil and curry leaves. Mix well and serve.
