Ingredients

Urad dal (Black gram) - 1 cup
Rice Rava (Semolina) - 2 cups
Poha (Flattened rice) - 1/2 cup
Fenugreek Seeds - 1 tsp
Salt - 1 1/2 tsp

Curd- 1 cup[Optional]
Water as required

Idli mix Instructions:
  1. Heat a pan and reduce the flame to low.Add dal and fry for 5 min.
  2. Add fenugreek and fry for 2 min.
  3. Add flattened rice and fry for 3 min. Transfer this to a plate and allow it to cool down completely.
  4. Powder the fried mixture. Strain it and keep it aside.
  5. Add rava to a heated pan and fry it for 4 min in low flame. 
  6. Switch off the flame and transfer it to a separate plate to cool down.
  7. Add fried rava and salt to the ground mixture . Mix it well.
  8.  Store it in an air tight container. This mix has a shelf life of 2 months.
Idli preparation Instructions :

    With Curd:
  1. Add 1 cup of idli mix and 1 cup of curd to a bowl and mix it well.
  2. Add required water . Mix well and let it sit for 10 min.
  3. Add a pinch of baking soda and mix.
  4. Make idlis with the batter.

   Without Curd:
  1. Add 1 cup of idli mix to a bowl. Add water till the required consistency is obtained.
  2. Mix well and keep the idli mix for 3-4hrs /overnight.
  3. Make idlis with the batter.
