Ingredients
Urad dal (Black gram) - 1 cup
Rice Rava (Semolina) - 2 cups
Poha (Flattened rice) - 1/2 cup
Fenugreek Seeds - 1 tsp
Salt - 1 1/2 tsp
Curd- 1 cup[Optional]
Water as required
Idli mix Instructions:
- Heat a pan and reduce the flame to low.Add dal and fry for 5 min.
- Add fenugreek and fry for 2 min.
- Add flattened rice and fry for 3 min. Transfer this to a plate and allow it to cool down completely.
- Powder the fried mixture. Strain it and keep it aside.
- Add rava to a heated pan and fry it for 4 min in low flame.
- Switch off the flame and transfer it to a separate plate to cool down.
- Add fried rava and salt to the ground mixture . Mix it well.
- Store it in an air tight container. This mix has a shelf life of 2 months.
With Curd:
- Add 1 cup of idli mix and 1 cup of curd to a bowl and mix it well.
- Add required water . Mix well and let it sit for 10 min.
- Add a pinch of baking soda and mix.
- Make idlis with the batter.
Without Curd:
- Add 1 cup of idli mix to a bowl. Add water till the required consistency is obtained.
- Mix well and keep the idli mix for 3-4hrs /overnight.
- Make idlis with the batter.
