Green Pea Soup |

Ingredients
Green peas (frozen) - 2 cups
Spinach - 2 cups
Mint leaves - 1 tbsp
Butter - 2 tsp
Milk - 1 cup
Sugar - 1/4 tsp
Nutmeg powder - 1/4 tsp
Lemon juice - 2 tsp
Salt and pepper to taste
Croutons for garnishing
Instructions
- Heat 1 tsp butter in a pressure cooker.
- Add green peas, spinach and mint leaves. Stir well for 30sec.
- Add 2 cups of water and cook until one whistle. Simmer for 2 minutes and switch off the flame. Keep it aside to cool.
- Blend it and strain.
- Heat 1 tsp butter in a pan. Add blended soup, milk, salt and pepper. Mix well.
- Bring to boil and simmer for 2 minutes.
- Add sugar and nutmeg powder. Mix well.
- Switch off the flame and add lemon juice and croutons just before serving.
