Ingredients
1 cup black raisin
1 cup golden raisin
1/4 cup butter
1 cup light brown sugar / white sugar
1 teaspoon cinnamon powder [Optional]
1 teaspoon ginger powder [Optional]
1/2 teaspoon cloves powder [Optional]
1/2 teaspoon salt
1 cup water
1 teaspoon vanilla extract
1 cup candied fruits
2 egg
1 teaspoon baking soda
1 1/2 cup all purpose flour
Instructions
1) Preheat the oven to 350 F(180 C).
2) In a pan add black raisin, golden raisin, butter, sugar, cinnamon, ginger, cloves, salt and water. Mix well.
3) Heat this pan and allow the mixture to boil for 5 min in medium flame.
4) Switch off the flame and allow it to cool down to lukewarm.
5) Add vanilla extract and candied fruits to this mixture and mix well.
6) Beat two eggs and add it to this mixture.
7) Finally add baking soda and flour to this and mix it well.
8) Pour the cake batter to a loaf pan and bake it for 60 min.
9) Serve the cake when it is completely cool. It taste great if you serve it next day.
