This super easy lentil curry made with tomatoes, green chilies and jaggery is flavorful and wholesome. It is slightly sweet, not too spicy and has a creamy texture. Do try out my version. The end result is delicious and satisfying without being complicated.

Ingredients

1/2 cup toor dal / split pigon peas
2 green chilies
1/2 teaspoon turmeric powder
1/2 medium size tomato, chopped
1/4 cup jaggery
1 teaspoon ginger
1/2 teaspoon cumin seeds
1 teaspoon mustard seeds
4-5 curry leaves
1/2 teaspoon red chilli powder
1 inch  cinnamon stick
3 cloves
1/4 teaspoon hing/asafoetida
1 teaspoon lemon juice
1 tablespoon Oil
Salt to taste
Coriander leaves

Instructions
  1. Pressure cook the toor dal in 1 cup of water for 7 to 10 minutes or until the dal is cooked.
  2. Grind it to a smooth paste. Add 1 cup of  water in it if its too thick.
  3. Heat a pan (Medium flame) and pour the ground dal in it.Add turmeric powder, green chillies, jaggery, tomato and ginger. Mix well.Close the lid and cook this for 5 min.
  4. Open the lid and  add two cups of water and simmer for 10 min. Keep stirring occasionally. Switch off dal till it reduce it to recurred consistency .
  5. Heat oil in another pan . Splutter mustard seeds, cumin seeds. Add cinnamon, cloves and curry leaves. Mix it and switch off the flame. Add hing and pour this to the dal. Mix it well.
  6. Add lemon juice and mix well.
  7. Garnish with coriander leaves and serve hot.
