Fish Pollichathu |
Cook Time: 30 min
Ingredients
Pomfret (Any firm fish) - 500 gms
for marination
Turmeric powder - 1/4 tsp
Pepper powder - 1 tsp
Salt to taste
for masala
Turmeric powder - 1/4 tsp
Kashmiri chilly powder- 1/2 tsp
Coriander powder - 1 tsp
Pepper powder - 1/4 tsp
Fenugreek - a pinch
Ginger paste - 1/2 tsp
Garlic paste - 1/2 tsp
Garlic cloves - 8
Green chilly - 2
Shallots - 1 cup
Tomato sauce/paste - 1 tsp
Curry leaves - 1 sprigs
Coconut milk - 4 tbsp
Coconut oil - 2 tbsp
Salt to taste
Instructions
- Clean the fish and marinate with turmeric powder, pepper powder and salt for 1 hour.
- Heat 1 tbsp oil in a large pan and fry the fish till light brown on both sides and keep it aside. No need to cook the fish at this time.
- Heat 1 tbsp oil in the same pan and add shallots, garlic, green chilly and curry leaves. Saute till the onions are brown.
- Add all the powders and ginger, garlic paste. Stir well for 1 min .
- Add tomato paste/sauce and cook it for 1 min.
- Add coconut milk and mix well.
- Switch off the flame and add fried fish into the pan. Carefully cover the fish with masala on both sides.
- Preheat the oven to 350 F. Place a sheet of aluminum foil on a baking tray.
- Layer the foil with some masala from the pan. Place the fish on top of this masala. Cover the fish with remaining masala.
- Place another sheet of foil over the fish and fold the sides well.
- Bake this in the oven for 25 to 30 min.
- Serve hot with rice.
