Thai Yellow Chicken Curry
Thai Yellow Chicken Curry

Chicken - 500 gms
Potato - 2 medium
Coconut milk (Thick) - 1 cup
Yellow curry paste - 1/3 cup
Onion (yellow) - 1/2
Fish sauce - 2 tsp
Brown sugar - 1 tbsp
Water - 1/2 cup
Coriander leaves

Instructions :

  1. Heat oil in a pan over a medium heat. Add thinly sliced onion and saute until onions are softened.
  2. Add chicken and curry paste. Saute for 5 min.
  3. Add potato and stir well.
  4. Add coconut milk and water(Add more water depending on the sauce consistency you want).  
  5. Simmer for 30 min or until the chicken and potato are fully cooked.
  6. Add fish oil and brown sugar. Stir well. Serve with rice.
