Thai Yellow Chicken Curry |

Ingredients:
Chicken - 500 gms
Potato - 2 medium
Coconut milk (Thick) - 1 cup
Yellow curry paste - 1/3 cup
Onion (yellow) - 1/2
Fish sauce - 2 tsp
Brown sugar - 1 tbsp
Water - 1/2 cup
Coriander leaves
Instructions :
- Heat oil in a pan over a medium heat. Add thinly sliced onion and saute until onions are softened.
- Add chicken and curry paste. Saute for 5 min.
- Add potato and stir well.
- Add coconut milk and water(Add more water depending on the sauce consistency you want).
- Simmer for 30 min or until the chicken and potato are fully cooked.
- Add fish oil and brown sugar. Stir well. Serve with rice.
