Honey BBQ Chicken |

Serves: 2
500 gram chicken, cubed
1 cup flour
2 eggs
1 teaspoon black pepper powder
1/2 teaspoon red chilly powder [Optional]
2 Dried red chilies [Optional]
1 Spring Onion/Scallions, finely chopped
Oil to deep fry
Salt to taste
For the sauce:
3 tablespoons BBQ sauce
1 tablespoon honey
1 teaspoon soy sauce
1/2 teaspoon vinegar
Directions:
- In a bowl combine flour, pepper powder, chilly powder and salt. Mix well and keep aside.
- To a separate bowl, beat eggs with salt and keep aside.
- Heat oil in a frying pan. Dredge the chicken with the flour mix, shake of excess, then dip in egg and then back in the flour mixture for a second coat. Gently place the chicken pieces in the hot oil and fry till the chicken is done. Drain off excess oil on paper towels.
- To prepare the sauce, mix all the ingredients for the sauce together.
- To a large bowl, add the fried chicken and the desired amount of sauce and toss well until the chicken is coated evenly with the sauce.
- Garnish with finely chopped spring onion/scallions.
