Chicken in Oyster Sauce |

Ingredients:
for marination:
Chicken - 500 gm
Corn starch - 2 tsp
Dark soy sauce - 1 tbsp
Pepper powder - 1tsp
White vinegar - t tbsp
for the sauce :
Dark soy sauce - 2 tbsp
Oyster sauce - 1 tbsp
White vinegar - 1 tbsp
Sugar - 1 tbsp
Corn starch - 1 tsp
Water - 1 cup
for stir fry :
Ginger - 25 gm
Garlic - 20 gm
Green onion - 5 no
Dried red chilly - 7 nos
Instructions
- In a bowl mix corn starch, dark soy sauce, pepper powder and white vinegar. Marinate the chicken with this mix for 10 min.
sauce:
- Mix dark soy sauce, oyster sauce, white vinegar, sugar, corn starch and water. Keep it aside.
stir fry
- Heat the wok on high, at least 30 seconds then pour oil in it.
- Add marinated chicken and cook it for 10 min and keep it aside. (stir occasionally)
- Add oil again in same wok and add ginger, garlic and dried red chilly. Stir well for 1 min.
- Pour the prepared sauce in it and wait to boil.
- Add cooked chicken and spring onions to the sauce and mix well.
- Thicken the gravy to your preferred consistency. Serve hot.
