Szechuan fried rice
Szechuan fried rice

for szechuan sauce:

Dried red chilly - 12
Oil - 2 tsp
Garlic - 10
Ginger - 2 inch
Cloves - 2
Cinnamon - 1
Tomato - 1 big
Sesame seeds - 1 tsp
Sugar - 1/2 tsp
Soy sauce - 1 tsp
Vinegar - 1/4 tsp
Corn flour - 1 tsp
Salt to taste

for rice :

Basmati rice (Cooked) - 1 Cup
Ginger garlic paste - 1 tsp
Carrot - 1
Egg - 2
Onion - 1 Small
Spring Onion


  1. Soak dried red chilly for 10 min in a cup of water. 
  2. Heat oil in a pan and add ginger, garlic, cloves, cinnamon, tomato, sesame seeds .Cook it in low flame and grind.
  3. Add soaked chilly, water and grind.
  4. Heat oil in a pan and add this ground mixture and stir well.
  5. Add salt, sugar, vinegar and soy sauce. Mix well for a minute.
  6. Add 2 tsp water in corn flour and add this in the sauce.Mix well and keep it aside.
Fried rice:
  1. Heat the wok on high, at least 30 seconds then pour oil in it.
  2. Add ginger ,garlic paste and onion.Stir well for 1 min. 
  3. Add carrots mix well for 1 min. If you are using other vegetables you can add at this point . I  used only carrots. Stir well till the vegetables are done.
  4. Add szechuan sauce and stir well.
  5. Now add cooked rice. Stir well for 1 min . Fried rice is ready.
  6. Heat oil in another pan and add eggs and salt in it . Scramble it well.
  7. Add this in fried rice and mix well. Add spring onion and serve with curry.[Gobi manchurian]
