Biriyani
Malabar Biriyani
Prep Time : 30 min
Cook Time: 60 min

Ingredients:

For Marination

Chicken - 500gms
Garlic pods - 5 big
Ginger - 2 inch
Green Chilly - 4
Turmeric powder - 1/4 tsp
Salt

For Masala
Onion - 1 big
Tomato - 1 Medium
Garlic pods - 5 big
Ginger - 2 inch
Green chilly - 4
Turmeric powder - 1/4 tsp
Red chilly powder - 1/2 tsp (Optional)
Coriander powder - 2 tsp
Garam masala - 1 tsp

For Rice
Jeera Samba rice-2 cups
Ghee - 1 tbsp
Cinnamon - 2 small
Cardamom - 3
Cloves - 4
Star anise - 1
Bay leaf - 1
Salt

For layering
Onion - 1
Cashew - 1/2 cup
Raisins - 1/2 cup
Coriander leaves


Instructions
  1. Gently grind ginger ,garlic,green chilly for marination and masala. It should not be a smooth paste.1 to 2 rounds in grinder will do.
  2. Marinate the chicken with the ground mixture, turmeric powder and salt ,for 10 min.
  3. Heat oil in a pan .Add onion and ground mixture for masala. Cook till onion turns golden brown. Add tomato and stir well. Cook for 2 min.
  4. Add turmeric powder, coriander powder and garam masala. Stir for 1 min.
  5. Add chicken in it and add water if needed .Close the pan and cook the chicken.
  6. Open the pan and thicken the gravy. Switch off the flame and keep it aside.
  7. Heat ghee in another pan. Add cinnamon, cardamom, cloves, star anise and bay leaf.
  8. Stir well and add rice ,4 cups of water and salt.  Do not close the pan .Cook the rice till whole water get absorbed. Switch off the flame and keep it aside.
  9. Heat ghee in a pan and fry onion, cashew and raisins .
  10. Take a biriyani pot. The final step is to layer rice,[onion,cashew, raisins ,coriander leaves] and chicken masala alternately till all your rice is used up. Add fried onions and coriander leaves as the top most layer. 
  11. Cover the pot with aluminium foil and 'dum' it for 20min.
  12. Serve hot.
