Vegetable curry

Prep Time : 15 min

Cook Time: 30 min

Ingredients :

Onion - 2 (finely chopped)
Coconut - 1/4 cup
Potato - 1/4 cup
Carrot - 1/4 cup
Cauliflower - 1/4 cup
Beans - 1/4 cup
Capsicum - 1/4 cup
Cumin seeds - 1/2 tsp
Asafoetida - 1/4 tsp
Curry leaves - 4-5
Green chilly - 2
Dry red chilly - 3
Bay leaf - 2
Ginger garlic paste - 1/2 tsp
Blended tomatoes - 6 medium
Red chilly powder -1 tsp
Amchoor - 1 tsp
Garam masala -  1 tsp
Sugar - 1/4 tsp
Salt to taste
Coriander leaves chopped
Butter - 1 tsp

Instructions


  1. Heat oil in a pan and add onion . Cook till onion turns golden brown. Add coconut in it and stir for 2 min. Grind this to a fine paste and keep it aside.
  2. Heat oil in a pan again and add cumin seeds,curry leaves, bay leaves,asafoetida,green chilly,1 red chilly,ginger garlic paste and stir well.
  3. Add ground onion coconut paste in it and cook it for 3 min.
  4. Add tomato pure and salt.Close the lid and let the tomato pure cook for sometime.
  5. Open the lid and add red chilly powder, amchoor, garam masala, coriander leaves and sugar. Stir well.
  6. Add vegetables and water .Close the lid and let the vegetables cook.
  7. Thicken the gravy to your preferred consistency .
  8. Garnish with butter and coriander leaves. Serve hot.
