Serves: 15 to 20 Appams


2 cups raw rice (Pachari)
1/2 cup grated or shredded coconut
1/2 teaspoon instant yeast / active dry yeast
1/4 cup milk
6 teaspoons sugar
Salt to taste


  1. Soak rice in water for 8 hours.
  2. Grind 1 cup of soaked rice with 1/4 cup of water to a smooth batter and keep it aside.
  3. In a pan, mix 2 tablespoons of the ground rice batter and 1/2 cup of water. Cook it in medium flame. Continuously stir this till it thickens and attains a glue like consistency. Keep it aside to cool down.
  4. Grind the remaining cup of rice with coconut, 3 teaspoons of sugar, yeast (don't add the yeast and sugar now, if you are using active dry yeast. See the note below and mix the fermented yeast at the next step) and 1/2 cup water. 
  5. Mix  step 2 batter, thickened ground mix from the step 3, ground batter from step 4. Stir well. Make sure there is no lumps in it. Add water if needed. 
  6. Keep this for 4-5 hours to ferment.
  7. Add milk ,3 teaspoons sugar, 1/2 cup of water and salt before you make appams.
  8. Serve hot with Chicken roast, Egg roast or Green peas masala


In a bowl mix active dry yeast yeast, 3 teaspoon sugar, 4 tablespoons warm water and wait till it get fermented.
