Ingredients

Gothambu nurukku (Broken wheat) -  1 cup
Jaggery - 500 gm
Water - 4 1/2 cup
Milk - 2 cup
Cardamom (Crushed) - 4
Ghee - 3 tsp
Cashews - 1/4 cup
Raisins - 1/4 cup
Thengakothu - 1/2 cup

Instructions


  1. Cook  broken wheat  in 4 cups of water (6-7 whistles in high flame).
  2. Meanwhile melt jaggery in 1/2 cup water. 
  3. Mix cooked wheat and melted jaggery . Cook till it become thick.
  4. Add milk and stir well. 
  5. Thicken the payasam to your preferred consistency (Payasam might thicken in consistency as it cools).
  6. Add 1 tsp ghee and cardamom powder and keep it aside.
  7. Heat 2 tsp ghee and roast cashews, raisins, and thengakothu.
  8. Add this to payasam and serve hot.
