Serves : 4
Ingredients
2 cups uzhunnu parippu/urad dal/white lentils
2 tablespoons rice flour
10 shallots, finely chopped
3 to 4 green chilies, finely chopped
1 sprig curry leaves
1 tablespoon black pepper corns, crushed
1 inch ginger, finely chopped
Salt to taste
1 pinch baking soda
Oil to deep fry
Instructions
- Soak lentils and keep aside for an hour.
- Grind the lentils in small potions without water. The batter should be thick and fluffy.
- Transfer the batter to a bowl and beat the batter with your hand for 5 min.
- Add chopped onion, green chilies, ginger, curry leaves, crushed black pepper corns, rice flour and baking soda. Keep aside for 5-10 min.
- Heat oil in a kadai. Wet your palm with water, take some batter and press it down with your other hand. Using one finger make a hole in the middle of it and add the vada to the oil.
- Fry it till golden brown .
- Serve hot with Coconut Chutney and Sambar.
Note : Wet your palm each time you make the round shapes.
Looks delicious. Will have to try it. A pity I do not have all the ingredients right now.
