Ingredients

2 cups uzhunnu parippu/urad dal/white lentils
2 tablespoons rice flour
10 shallots, finely chopped
3 to 4 green chilies, finely chopped
1 sprig curry leaves
1 tablespoon black pepper corns, crushed
1 inch ginger, finely chopped
Salt to taste
1 pinch baking soda 
Oil to deep fry

Instructions
  1. Soak lentils and keep aside for an hour.
  2. Grind the lentils in small potions without water. The batter should be thick and fluffy.
  3. Transfer the batter to a bowl and beat the batter with your hand for 5 min.
  4. Add chopped onion, green chilies, ginger, curry leaves, crushed black pepper corns, rice flour and baking soda. Keep aside for 5-10 min. 
  5. Heat oil in a kadai. Wet your palm with water, take some batter and press it down with your other hand. Using one finger make a hole in the middle of it and add the vada to the oil.
  6. Fry it till golden brown .
  7. Serve hot with Coconut Chutney and Sambar.

Note : Wet your palm each time you make the round shapes.
